West Indian - Style Sweet Potato Bun

12 oz ginger ale (not diet)½ cup muscovado sugar2 tbsp molasses1 tbsp allspice2 tbsp coconut oil2 tbsp ground flax seed1 cup flour2 cups whole wheat flour1 tbsp baking powder1 cup sweet potato puree¼ cup shredded coconut½ cup raisins¼ cup diced candied fruit mix
Heat the oven to 350F and grease a 9x5” loaf pan
In a large pot, combine ginger ale, sugar, molasses, allspice and oil. Cook over low heat just until the sugar has dissolved and coconut oil is melted.
Whisk in the flax seed and remove from heat.
Mix in the flours, baking powder, sweet potato puree, coconut, raisins and candied fruit.
Pour into prepared loaf pan
Bake for 45 minutes or until a knife inserted comes out clean
