Gazpacho

Ingredients
4 cups tomato juice1/2 medium red onion, chopped2 small cucumbers, peeled & seeded, chopped1/2 green bell pepper, chopped2 Tbsp fresh cilantro, chopped2 medium tomatoes2 avocados, diced1 Tbsp dry oregano1 Tbsp wine vinegar1 tsp sugar2 Tbsp olive oilhot sauce (begin with 2 dashes) to taste
Directions
Put tomato juice in large mixing bowl. Add red onion, cucumber, bell pepper, and cilantro to food processor and chop fine or blend then add to tomato juice. Blanch, peel, seed & dice tomato. Add tomato, diced avocado and remaining ingredients in bowl. Chill.
