Asian Veggie Soba

3.5 oz soba noodle cooked al dente1/4 thinly scliced onion2 cloves garlic minced divided in half1/2 T canola oil1/2 red pepper sliced thinly60 grams of thinly sliced cabbage1 small thinly sliced carrot1/2 t minced ginger1 t sesame oil1 T soy sauce 1/2 T honey1/5 jalapeno 1/2 of it minced and the other half slice into 4 slices
cook soba noodle until al dente drain and rinse
in a bowl combine sesame oil, soy sauce, 1/2 of the garlic, minced jalapeno, minced ginger and honey and stir til mixed well
heat a skillet (I used cast iron) on medium heat, add canola oil when hot add onions, 1/2 of garlic and peppers, saute 5 minutes add cabbage and and carrots, then add 1/4 of the sauce saute another 7 minutes stiring twice add noodles and remainder of the sauce heat until desired temperature. serve.
Serving Size: makes 2 even portions
