12 corn tortillas1 cup grated or crumbled queso fresco (part skim)1 cup enchilada sauce1 cup fresh chopped cilantroPoached Egg (or over easy using just pan spray)
Heat a non-stick pan and lightly toast tortilla. While toasting on the 2nd side, add some enchilada sauce (like you're making a pizza) and a little cheese and cilantro, slide this to a plate. Repeat each later until you have 4 tortillas stacked. Top with a poached or over easy egg, add salt and pepper to taste and enjoy! Perfect any time of day!
