Hearty Slow Cooker Beef Stew - Low Carb, Paleo

Ingredients
2 lbs. Stew Beef10 oz. Turnips, cubed3 Tbs. Olive Oil2 Cups Beef Stock12 oz. Package Bacon – Cooked Crisp and Crumbled14.5 oz. Can Diced Tomatoes – Juice Drained4 oz. Mixed Bell Peppers – Chopped4 oz. Mushrooms – Quartered2 Ribs Celery – Chopped1 Large Carrot – Chopped1 Small Onion – Chopped4 Large Cloves Garlic – Minced2 Tbs. Tomato Paste2 Tbs. Worcestershire Sauce2 tsp. Sea Salt1 ½ tsp. Black Pepper1 tsp. Garlic Powder1 tsp. Onion Powder1 tsp. Dried Oregano 2 tsp. xanthan gum
Directions
1. Heat slow cooker on low setting.
2. In a large skillet over medium heat, sear the beef in olive oil, browning on both sides. Transfer to slow cooker.
3. In a small bowl, combine salt, pepper, garlic powder, onion powder, oregano and xanthan gum.
4. To the slow cooker, add Beef Stock, Turnips, bacon, tomatoes, bell peppers, mushrooms, celery, carrot, onion, garlic, tomato paste, Worcestershire sauce, and spice mixture.
5. Cover and cook on low 6-8 hours.

Serving Size: Makes 16 servings.
