Chicken Cauliflower Shephard's Pie

2 heads cauliflower, trimmed2 lbs ground chicken3 oz Greek yogurt3 oz bag real bacon pieces1 can diced tomatoes6 oz cheddar cheese3 Tbsp salted butter (divided)
* Brown chicken in frying pan while simultaneously steaming cauliflower til tender.
* Add tomatoes to chicken; simmer.
* Puree steamed cauliflower in food processor. Add in yogurt, cheese, and 1.5 Tbsp butter and blend well (can also add chives). Stir in bacon.
* Spread chicken and tomatoes into bottom of casserole dish. Spoon cauliflower mixture on top. Place three 1/2 tbsp pats of butter on top. Can top with some paprika.
* Bake at 425 for 30 minutes
