Spinach Bacon Omelet

Ingredients
6 eggs (1 yolk only)1/4 cup of shredded pepper jack cheese1/4 cup of spinach, torn2 slices of turkey bacon, cookedcooking spray as needed
Directions
Whisk whole egg and 5 egg whites together. Cook in skillet until mostly cooked through. Add cooked turkey bacon (in skillet or oven beforehand), cheese, and spinach. Fold over into omelet. Finish cooking until cheese is melted and eggs are cooked.

Serving Size: makes one omelet
