Veal Napolitana

1 tbsp oil500g veal steak, sliced1 red capsicum, sliced1 onion, sliced1 carrot, thinly sliced1 clove garlic, crushed1/4 C white wine1 can Minestrone soup400g can crushed tomatoes1/4 cup pitted olives, optional1 tbsp chopped flat leaf parsley
Heat oil in a large frying pan and cook veal over a high heat until browned.
Add the remaining ingredients, stir and bring to the boil.
Cover the pan and reduce the heat to a simmer. Cook for 30 - 40 minutes or until the meat is tender.
Serve on a bed of rice, pasta or noodles.
