Turkey Bean Chili

1T Extra Virgin Olive Oil! C finely chopped celery1 c finely chopped carrots1/2 green bell pepper, finely chopped1 c finely chopped red onion2 T tomato paste3 large garlic cloves, minced1.5 pounds ground turkey1T mild chili powder1 t cumin2 t dried oregano1/2 t sea salt1/4 t black pepper1 15 ounce can diced tomatoes1 15 ounce can red kidney beans, rinsed and drained1 15 ounce can Cannellini beans, rinsed and drained1 cup low sodium vegetable broth
Heat olive oil over medium heat. Add celery, carrot, bell pepper, and onion. Cook until soft, stirring occasionally. Add tomato paste, and cook 2 minutes stirring continuously. Add garlic and cook 1 minute.
Add turkey to the pot, break up turkey with the back of a wooden spoon or spatula. Cook until turkey is no longer pink. Add chili powder, cumin, oregano, salt, and pepper. Cook 2 minutes, allowing spices to release their flavors. Add the tomatoes, beans, and broth. Cover and heat until chili is hot, and bubbly.
Serving Size: Makes 6 1.5 cup servings
