Potato hash pancake

Ingredients
1 med potato( I used klondike goldust)2 radishes1/2 zucchini1 large egg1 large egg white1tsp curry1/4 tsp garlic powder1/4 tsp red pepper flakesa dash of Himalayan pink salt
Directions
shred veggies.
rinse, drain, and dry shredded potato
mix all ingredients, including seasoning.
scoop onto hot griddle, I used a griddler so it works as a press, but you can just press with a turner. cook for about 4 minutes a side.

Serving Size: 1 serving = 8 mini pancakes
