Low Fat Banana Chocolate Chip Protein Muffins

2 Bananas2 large eggs1 cup plain Greek yogurt2 cups oats1/4 cup Splenda Sugar Blend for Baking1 tsp Baking Powder1 tsp Baking Soda1/4 tsp Nutmeg, ground1 tsp Vanilla Extract1/2 tsp Cinnamon, ground1/4 tsp Salt1/4 cup milk Chocolate chips
Preheat oven to 400F and prepare a muffin pan by spraying with cooking spray. Set aside.
Add all ingredients except for chocolate chips in a food processor and process on high until oats are broken down and batter is smooth and creamy.
Pour batter into prepared muffin pan, filling each cavity until it is about ¾ full. Sprinkle a few chocolate chips over the top of each muffin.
Bake for 15-20 minutes, until the tops of your muffins are golden brown (almost look too done) and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for ~10 minutes before removing.
Serving Size: 12 muffins
