Low Carb Pancake Breakfast Sandwhich

Ingredients
Pancake ingredients:2.25 oz Pork Skins3 TBS Almond mill or flour3 large eggs3 TBS heavy cream3/4 tsp Vanilla extract6 TBS sugar free or low carb syrup3 Sausage pattiesFilling ingredients:3 egg patties3 Sausage patties3 slices cheese (if desired, but not figured in on fat and carbs I calculated)
Directions
Grind pork skins in food processor. Pour into bowl and stir in remaining pancake ingredients. If you have a metal form to put in your frying pan, place in pan with 1 TBS oil and pour batter in to fill. I personally didn't have one, so just poured in as a pancake. Brown, then flip. Repeat until you have 6 "pancakes". Either cook sausage and egg in the metal form or you can do as I did and use a packaged sausage patty and packaged egg patty. Assemble pancake, egg & sausage and enjoy.
