Kale and Sweet Potato Minestrone

Ingredients
1 chopped onion2 minced cloves garlic1 TBSP almond oil3 cups chopped kale2 diced sweet potatoes (about 5" long each)900 ML no salt vegetable broth (little less than 1 qut)2 cups (4 oz) cooked pasta (penne, bow ties, shells)Sprinkle of crushed red pepper)
Directions
Saute 1 chopped onion and garlic in the oil until softened.

Add kale and sweet potatoes and broth - simmer until kale wilts and sweet potatoes are tender.

Stir in cooked pasta . Sprinkle with crushed red pepper.

Serving Size: Makes 4 servings about 1 1/2 cups each
