Salsa verde Boston Butt

Ingredients
1 tsp coconut oilBoston butt about 2.5 lbs3 Tbsp salsa verde1.5 cups sliced raw yellow onion1/2 cup beef or chicken stock
Directions
Heat oil in large pan. sear all sides of meat until golden. place sliced onions in bottom of crock pot. set meat on top. Deglaze pan with stock and salsa verde. pour on top. (meat cooking will provide more sauce so don't add more).
cook on high 3-4 hours or low 6-8 hours.
