Enchaladas

8 oz 93% lean ground beef1 cup chopped onion1/2 - 3/4 cup Tostito's mild salsa (or your favorite brand or heat preference)6 Mission low carb soft taco size tortilla 1 small can La Victoria Enchalada Sauce4 oz. Kraft 2% sharp cheddar cheese, grated.
Brown ground beef in a nonstick skillet breaking up as it cooks. half way through cooking time add diced onion. Cook until ground beef is no longer pink and onion is opaque. Drain excess fat if any remains.
Stir in salsa cooking until hot.
Put half of the enchalada sauce in an 8 or 9 inch square baking dish.
Fill tortillas with equal amounts of meat mixture. Arrange seam side down on top of sauce in baking dish.
drizzle with remaining enchalada sauce.
Top with grated cheese.
Bake in preheated 375 degree oven 20 - 30 minutes, until hot.
