Easy Vegan Dahl

Ingredients
1 tsp toasted sesame oil1 Tbsp coconut oil1 medium onion, diced 4 cloves of garlic, crushed1 Tbsp fresh ginger, grated or finely chopped1 tsp coriander seeds1/4 tsp mustard seeds (optional) 1 cup dry red lentils3 cups water2 tsp turmeric 1-2 Tbsp lemon or lime juice cilantro
Directions
1. Heat coconut and sesame oil in pot or dutch oven.
2. Saute onion, garlic, and ginger over low heat for a few minutes. If using raw turmeric instead of ground, add here.
3. Add mustard and coriander seeds, stir two minutes to toast.
4. Add ground turmeric and lentils, stir another minute.
5. Add water. Bring to a boil, then reduce to a simmer, covered, for approximately 20-30 minutes, stirring often.
6. When finished, add lemon or lime juice and fresh cilantro (optional).


Serving Size: Makes 4 main dish servings.
