Oatmeal Pancakes (Simple) BAsed on a Theme from Paganini

Ingredients
1/2 c. old fashioned oatmeal1/2 c. enriched flour1 t. baking powder1/2 t. baking soda1/2 t. iodized salt3 T. sugar1 large egg2 T. Canola oili t. vanilla
Directions
Heat a cast iron skillet so that drops of cool water sizzle on contact.

Blend all the dry ingredients in a medium-large bowl.

Beat the egg slightly.
Blend in the oil, buttermilk, and vanilla.

Add the moist ingredients to the dry, and stir until just moistened.

Place a little over 1/4 c. batter on hot skillet. Flip when you see bubbling through, and cook a little longer,

Serving Size: makes seven 4-5" pancakes
