Creamy Gluten Free Cauliflower Leek Soup

1 Large Head Cauliflower2 Large Onions Diced1 Cup Baby Bella Mushrooms sliced3 Leeks, white parts only - sliced6 tsps Bacon Grease, Butter, or other fat for saute6 Cups Vegetable Broth3 tsps Chicken Base2 Packages Pioneer Gluten Free Country Gravy Mix1 Clove Garlic Diced
Melt fat in pan and saute onions, leeks, mushrooms, cauliflower and garlic over medium high heat until they begin to caramelize and soften. Add vegetable broth and bring to a boil. Add chicken base. Lower heat and simmer covered for 20 minutes. Remove cover and reduce liquid by half. Use stick blender to puree until smooth. Combine gravy mix with one cup cold water and add to soup while stirring. Serve warm
