1 bag frozen corn (3 1/3 cups)1 chopped onion2 Tbsp Extra Virgin Olive Oil1/4 cup flour2 packets Trader Joe's Chicken Broth, reconstituted with 2 cups water2 cups Milk, 1%1 large Russet potato, peeled and cubed4 oz frozen cocktail shrimp, thawed1 tsp ground thyme1/2 tsp Salt1/2 tsp Black pepperChili powder, as garnish
Heat olive oil over in a soup pot over medium-high heat. Add onion and saute until soft. Add flour and cook for 1 minute. Whisk in broth and milk. Add corn and diced potato. Bring to a boil, reduce heat, and simmer for 10 minutes until potato is cooked and soup is thick. Add shrimp and spices. Heat through and serve.
