Healthy-Whole Foods Slow Cooker Turkey Chili

1 medium yellow onion, chopped1 medium bell pepper, chopped1 medium carrot, chopped1 small jalepeno with seeds, finely chopped2 medium heirloom tomatoes, roughly chopped1 C. unsalted chicken broth1.5 C (dry) Pinto Beans, soaked1 lb. lean ground turkey1 28-oz can diced tomatoes, unsalted1.5 tsp garlic, minced1 Tbsp. cilantro1 t. paprika1 t. poultry seasoning1/2 tsp. cayenne/red pepper
-Soak the pinto beans the night before, or do a quick soak the day of if you prefer
-In a large skillet, pour a small amount of the chicken broth; add the chopped onion, carrot, jalepeno, bell pepper, and garlic and begin to sautee over medium-low heat for about 5 minutes.
-Add ground turkey to the skillet mixture and cook about 5 more minutes, stirring frequently (You want the turkey to begin to brown but not cook completely)
-Transfer skillet mixture to your crock pot.
-Add pinto beans (drained and soaked), chopped tomatoes, canned tomatoes, remaining chicken broth, and seasoning to the slow cooker.
-Stir the contents of the slow cooker to mix all ingredients thoroughly. Cover the slow cooker, turn it on low, and let it sit and cook for 6 hours.
Serving Size: Makes roughly 8, 3/4-cup servings
