Mushroom & Pepper Omelet

Ingredients
2 Egg1 Egg white2 Tbs. Green Bell Pepper, diced1 Baby Portabella Mushroom, dicedDash of saltDash of pepper
Directions
1. Whip eggs together with salt & pepper. 2. Pour in a non-stick skillet on med. heat. 3. Once bottom of omelet starts to set put the mushrooms & peppers in the middle. 4. Let the egg set the rest of the way & fold the sides over the mushroom & pepper mixture in the middle. 5. I like to flip it at this point & fry for a little longer the get the veggies nice & sautéed. 6. Take off of heat & enjoy. Serving Size: 1
