Johns Italian Meat Ball

Ingredients
1/3 cup plain bread crumbs1/2 cup skim milk2 Tablespoons Olive oil1 onion, diced1 pound ground beef, 85 % lean1 pound ground pork or sausage2 eggs1/4 bunch fresh parsley, chopped2 cloves garlic, crushed2 teaspoon salt1 teaspoon black pepper1/2 teaspoon red pepper flakes1 teaspoon dried Italian herb seasoning2 tablespoons grated Parmesan cheese
Directions
1. soak bread crumbs in milk for 20 min.
2. heat oil in a skillet and cook onions till translucent
3) mix meat, onions, and all the other ingredients in a large bowl and combine well. Put bowl in refrigerator for 1 hour.
4) preheat oven to 425 degree.
5) line two baking sheets with foil and spray with cooking spray.
6) roll meat mixture into 1.5 inch balls and place on foil lined baking sheet.
7) bake in oven for 15 to 20 minutes.

Serving Size: makes approximately 26 1.5 inch meatballs, 1 MB per serving
