Apricot Jam Bread (Gluten Free)

2 Cup Rice Flour (white or brown)I tsp Nutmeg1.5 tsp baking soda1.5 Cup yogurt (plain, vanilla, or same flavor as fruit spread).5 Cup fruit spread .5 Cup of apple juice (or .25 applesauce, .25 water)1 egg (or egg white)1 Cup fresh/dried fruit
Preheat oven to 350 degrees f.
Mix the wet ingredients. Sift the dry ingredients. Mix together just enough to mix. Add water by tablespoons if too dry. Then add dried apricots.
Cook 45 minutes in loaf pan.
*Refridgerate left overs after 2 days. Fruit will cause the bread to mold.
