boneless, skinless chicken breast, 8 oz Stuffing mix, 1.5 cup Mushrooms, .25 cup, med yellow onion, .25 Better than Boullion Chicken Base, 2 tsp Water, 1 cup Smucker's Apricot Preserves, 4 tbsp
bring water, boullion and onions to a boil in a med saucepan. Add mushrooms and stuffing mix. Turn off heat, stir and set aside. Place chicken in a small glass baking dish after spraying it with cooking spray. heat oven to 375 degrees. spoon stuffing over chicken. Spoon preserves down the center of the stuffing leaving it mounded. Do not spread it. Place foil loosely over the top. Bake 40 min or until chicken reaches 180 degrees.
