Quinoa Protein Pancakes

Ingredients
1 serving (1/4 c. dry) cooked quinoa1 scoop (about 6 Tbsp) Whey Protein Powder1 c whole wheat flour2 egg whites1 tsp soybean oil1/2 tsp baking powder1/2 c Soy milk
Directions
Makes 8 servings of 4-5 inch pancakes.

Whisk items together in a glass bowl thoroughly. Spray non-stick coating (like PAM) on your frying pan and heat with medium heat. Spoon 1/8 of the mixture onto the pan. Cook until bubbles are coming through the middle then flip and cook for another 30 secs to 1 minute.

Serve with a bit of maple syrup or honey. YUM!
I use Vanilla flavored protein powder. Will keep in the fridge (ziploc baggy or tupperware) for several days. Excellent portable snack for traveling!

Variation can be added with blueberries, cherries, grated apple, or banana and walnuts.

    I was looking at these and they sound really great but the quinoa isn't included in the nutritional information but would only raise the calorie count of each pancake by 21 calories. I'll have to try them for a twist on the protein pancakes I usually make. - 3/30/09
