Oven Fried Chicken

12 chicken breast tenderloins1 cup buttermilk (lowfat)1 T salt (you can cut this down a bit)1 t paprika2 t chili power1 t black pepper2 t garlic powder1 t onion powder1 cup flour1 cup panko1/2 cup cornmeal3 T butter
6 to 24 hours before cooking combine buttermilk, salt and spices in a freezer bag and shake to mix well. Add chicken tenders and place in a bowl in the fridge for 6-24 hours to marinate.
At the time of cooking preheat oven to 400 degrees. Line a cookie sheet with parchment paper (necessary). Place butter on the sheet and put in the warming oven to melt (do not overheat butter). Place flour, panko, and cornmeal in a bag and shake to combine. Add 1/2 the chicken and shake to cover (get the dry mixture well pressed in). Place first set of chicken breast on the buttered parchment. Coat the second set of tenderloins and add to pan. Put in oven for 10-15 minutes then turn over gently and bake for 10 more minutes until golden.
