French Onion Soup

Ingredients
3 tbsp butter2 medium sweet onions, thinly sliced1/4 tsp thyme1/4 c red wine3 c beef stock, low or reduced sodium1 dinner roll, small (80 calories)1/2 c italian cheese blend, 6 cheese, finely shreddedsalt and pepper to taste
Directions
Thinly slice onions and saute with butter. Saute onions until they caramelize. Add thyme and salt and pepper to taste. Add red wine and deglaze pan. Saute until wine evaporates. Add beef stock and bring to a boil and boil for 10 minutes. Meanwhile, slice dinner roll into slices and toast until golden brown. Add soup to crocks top with croutons and 1/4 cup cheese and bake in oven at 375 for 10 minutes until cheese is melted and bubbly.

Serving Size: Makes two 1.5 cup servings.
