1 Tbsp of olive oil, extra virgin1 onion, dicedHalf of a green pepper, diced2 cloves of garlic, minced1 cup of kale, chopped1 cup of spinach, chopped8 eggs1/4 cup 2% milk1/2 cup of shredded cheese, mexican2 tsp onion powder2 tsp garlic powder1/2 tsp oregano1/4 tsp tarragon1 tsp salt1 tsp pepper
Add the olive oil to a skillet on med-high heat. Add onion and green pepper to the skillet and saute for about 3-5 mins or till translucent. Add garlic, kale, and spinach and cook till the spinach and kale wilt. Whisk eggs, milk, onion powder, garlic powder, oregano, tarragon, salt, and pepper together till frothy and golden yellow. Pour the egg mixture over the ingredients in the skillet and turn down to med-low and cover pan with lid. Let this cook covered for about 10-12 mins until eggs are set(firm). Remove lid and add add cheese over top of omelet. Replace lid and let cheese melt, about additional minute. Cut into 4 servings and enjoy.
