1-16-ounce package small pasta1 cup Veganaise1/2 cup Nancy's yogurt1 tsp mustard1 tbsp apple cider vinegar2 teaspoons sugar1/2 teaspoon saltFreshly ground pepper to taste3 stalks celery, finely chopped2 tbsp (26 grams) finely diced red bell pepper1/2 diced red onion (1/4 cup 36 grams) finely diced after measuringfreshly chopped parsley
Cook noodles in a large pot of boiling water until tender, 8 to 10 minutes or according to package directions. Drain. Transfer to a large bowl to cool for at least 15 minutes.
Combine mayonnaise, yogurt, vinegar, mustard, sugar, salt, and pepper in a small bowl.
When the noodles have cooled, add celery, red pepper, onion, and the mayonnaise mixture; stir well to combine.
Cover and refrigerate until cold, at least 2 hours. Taste and adjust seasoning with salt and pepper.
