Ginger Cucumber Salad

Ingredients
1 large cucumber, peeled in strips, sliced thinly3 raw baby carrots, grated2 thin slices of onion, quartered1.5 tsp ginger root, grated1/4 c white vinegar2 tsp olive oil2 tsp sugarsalt and pepper to taste
Directions
Add cucumbers, carrots, and onion to a big bowl.
Mix ginger, vinegar, oil, and sugar in a small bowl. Whisk well to combine.
Pour dressing over cucumber mixture
Add salt and pepper
Enjoy right away, or refrigerate for a more potent flavor.
