2 eggs, 1 t vanilla, 2 c unsweetened applesauce, 1 banana, 1/2 c honey. Mix ingredients well. In separate bowl mix: 5 c rolled oats, 1/4 c flaxseed meal, 1 T cinnamon, 3 t baking powder, 1 t saltBlend in dry ingredientsadd 2 3/4 c milk and stirfold in any dried fruit, nuts or choco chips as desiredPour into cupcake muffin tins or into 9x13 cake pan (well greased). Bake in preheated 350 oven for 30 min or until toothpick comes out clean. Freeze half in individual baggies. Store other half in refrigerator. Heat if desired before eating on the go or just grab and go for breakfast or a good snack!
