Stuffed Bell Peppers (4 servings)

2 Medium Bell Peppers, Halved1/2 lb Lean Ground Turkey2 plum tomatoes (3/4-1 c. chopped)1 small jalepeno pepper, diced2 t. Mr's Dash Southwestern Smoke Seasoning1 tsp. minced garlic1 small yellow onion, chopped1 C unsalted chicken broth2-3 tsp tomato paste
-Preheat oven to 350
-Halve and clean out 2 Bell Peppers, place cut-side up in a baking dish
-Combine chicken broth and tomato paste in a small bowl and whisk into a smooth sauce
-Combine all remaining ingredients in a bowl and mix together well, then spoon mixture evenly into bell-pepper halves; pour the sauce over the stuffed peppers
-Bake for 35-45 minutes (check at 35 for done-ness, turkey should have little to no pink. cook further if necessary)
Serving Size: Makes 4 stuffed-pepper halves
