Oregano-Lemon Chicken

3 lbs. boneless, skinless chicken breasts, pounded thin3 tablespoons lemon juice2 tablespoons honey1 tablespoon olive oil3 garlic cloves, minced2 teaspoons dried oregano
Place the chicken in a greased 13"X9"X2" baking pan. Combine the lemon juice, honey, oil, garlic and oregano; pour over chicken. Bake, uncovered at 375 for 45 minutes or until a meat thermometer reads 180 and chicken juices run clear, basting ossasionally with pan juices.

My husband and I both love this one. I only made 3 chicken breasts with the same amount of lemon/oregano mix and then cut up potatoes and carrots and put in the dish as well. YUM! Next time I'll cook the vegetables half way at least before adding to this dish. They took quite a bit longer to cook. - 8/16/09
