Ricotta Pancakes

Ingredients
1 egg1/4 cup whole milk ricotta cheese2 T flax seed meal1/2 tsp. baking powder1 tsp. Swervedash of salt
Directions
Add all ingredients to a blender container and process until smooth.

Heat a skill or griddle over medium low heat. Spray the griddle or add coconut oil, if you wish.

Pour 1/3 of the batter into each of three pancakes on the griddle. Cook slowly and flip when firm.

Serve immediately. Pancakes freeze well if separated by parchment paper.
