Oat Flaxseed Muffins

1 1/2 cups all purpose flour3/4 cups Flaxseed Meal3/4 cups Oatmeal 1 cup brown sugar, packed2 tsp. baking soda1 tsp. baking powder1/2 tsp. salt2 tsp. cinnamon1 1/2 cups carrots, shredded2 apples, medium sized, peeled and shredded1/2 cup raisins3/4 cup 2% milk2 eggs, large, beaten1 tsp. vanilla1 cup chopped nuts (optional). These are not in the calorie calculations
Blend together flour, flaxseed meal, oatmeal, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, and raisins (and nuts if you are using them). Combine milk, eggs, and vanilla. Pour into muffin mixture and blend well until all ingredients are moistened. Do not over mix.
Fill muffin cups 3/4 full. Bake at 350 for 15-20 minutes.
