Cheese and spinach scramble

Ingredients
1 large Egg white1 large Egg1 tbsp Parmesan Cheese, shredded1 cup Spinach, fresh1 tbsp Extra Virgin Olive Oilsalt and pepper to taste
Directions
Beat egg and egg white together while pan heats with olive oil. Roughly chop spinach and add to pan. Once the spinach is reduced, add eggs. Once the eggs solidify, flip and sprinkle with cheese, then fold.
