Bowtie Pasta with Red Pepper Pesto Cream Sauce

Ingredients
12 oz Pasta, uncooked1 - 7oz jar roasted red peppers, drained and chopped1 1/4 cup light cream1/3 cup pesto sauceoptional:boneless, skinless chicken breast cut into stripsfresh grated Asiago cheese
Directions
1) Cook pasta and drain.

2) In skillet heat 1 tbsp olive oil and cook chicken thoroughly (about 5 mins.) - if you are serving with chicken.

3) Add red peppers, cook 1 minute.

4) Add cream and simmer until thick, about 3 minutes.

5) Remove from heat and stir in pesto sauce.

6) Toss with pasta and sprinkle with cheese.

- Makes 8 (1 cup) servings
