Creamy Chicken Soup with Roasted Garlic and Noodles

Ingredients
28 peeled garlic cloves2 tbsp olive oil1 medium yellow onion, thinly sliced2 tbsp butter4 cups of chicken broth1 tsp salt1/2 tsp pepper4 oz whole grain wide ribbon noodles1/2 cup heavy cream2 skinless, boneless chicken breast (approx 10.5 oz) cut into bite-size peices
Directions
preheat oven to 400

place 20 cloves of garlic on aluminum foil, drizzle with olive oil, fold and seal. place directly on rack and roast until soft and golden brown (approx 45 min)

in large saucepan, melt butter over medium heat.
add onion and cook, stirring frequently, until softened (approx 5 min)

stir in roasted garlic and remaining 8 cloves of fresh garlic until fragrant (approx 3 min)

add broth, salt, pepper and bring to boil.
reduce heat to medium low and simmer for 20 min.

cook noodles separately according to directions.

puree soup in pan using an immersion blender.
add cream and chicken, heating over medium heat until hot.

add noodles.

serve immediately or cool and store in fridge for up to 1 week.
