Lentil Soup with Bacon

Ingredients
6 slices bacon, diced1 med onion, diced4 med carrots, diced4 stalks celery, diced3 tbsp olive oilsalt/pepper2 cup lentils (cleaned)1 tbsp Cumin8 cups chicken broth1 Bay Leaf1 tbsp thyme
Directions
cook bacon until crisp, remove from pan. Saute onion, carrot, and celery in olive oil with salt and pepper, 10 minutes , until soft. Add lentils and cumin and fully coat in the oil, 2 mins. Add chicken broth, bay leaf and thyme. add bacon back to pan. Bring to boil and reduce to simmer for 30 minutes.
