Fried Matzah

Ingredients
6 regular-size matzahs3 large eggshot watersalt and pepper to taste
Directions
Crumble matzahs by hand into a bowl. Add enough hot water to cover, and let soak until soggy. Pour into a mesh strainer and press out water with a spoon or spatula.
In a separate small bowl, scramble the eggs. Add to the matzah, and stir to combine.
Heat a large skillet over medium-high heat. When hot, add matzah mixture. Spread evenly over pan, and let cook undisturbed until bottom begins to firm up. Break up matzah and stir, then spread over pan and again let cook undisturbed. Repeat these steps until matzah is cooked to taste.
Season to taste.
