Ingredients

1 1/2 C. Water--luke warm1 Tbsp. Honey2 tsp. yeast3 C. Spelt whole wheat flour1 tsp. salt2 Tbsp. Chia seed2 Tbsp. Flax meal1 egg.
Combine water, yeast and honey in a mixing bowl (large). Let Proof. Gradually add flour, egg, seeds and salt, mixing with bread dough hook until blended and the right consistency. Knead the dough by hand, or use setting on bread machine or dough hook.
Let rise in warm oven for one hour or until double in bulk.
punch down and use in your favorite bread recipe--buns, bread etc.
For a large loaf of bread, I place dough in a lightly greased pan and let rise again, about 45 minutes.
Bake at 375, 20 minutes for bread.
Serving Size: makes 12-16 slices of bread.
