Roasted Cauliflower Soup

Ingredients
Directions
One head cauliflower3 cups chicken stock (reduced sodium preferred)One tablespoon Half and HalfOne tablespoon cooking sherryOne tablespoon olive oilSalt and pepper
Preheat oven to 350
Chop cauliflower into small florets, place on cookie sheet
Toss with olive oil, salt and pepper
Roast for 30 minutes
Bring stock to a boil on stovetop
add in cauliflower
Puree in blender or with immersion blender until quite smooth
transfer back to stove top, adding sherry and cream
Simmer 10 minutes. Add more black pepper to taste
Serving Size: makes 3 large bowls of soud
