Banana bread with flax seed

Ingredients
2-3 meduim bananas1/3 cup flax seed1/3 cup unsweetened Apple sauce3/4 cup Splenda1 egg beaten1Tsp Vanilla Extract1Tsp Baking Sodapinch of salt1.5 cups of flour
Directions
Combine all ingredients adding flour last
Grease pan and bake at 350 for 1 hour

    A fairly moist bread, which is not always the case when using Splenda. Good texture and flavor. I used ground flax seeds. Will try with some chopped walnuts next time. - 12/28/08
