-3/4 Cup Butter, Softened-1/2 Cup Confectioners' Sugar-1 Teaspoon Grated Lemon Peel-1 Tablespoon Lemon Juice-1 1/2 Cups All Purpose Flour-2 Teaspoons Sugar
Preheat oven to 325. In a bowl, beat the butter, confectioners' sugar, and lemon peel until blended. Beat in the lemon juice and gradually beat in the flour. Divide the dough into four portions. On a lightly floured surface, roll each portion into a 5x3.5" rectangle. Transfer to ungreased baking sheets and cut each rectangle into 6 squares. Do not separate the squares. Prick the tops with a fork and sprinkle with the sugar. Bake for 20-25 minutes or until light brown. Cool on the pans to 10 minutes and then transfer to a cutting board. Recut the squares and finish cooling on a wire rack.
