-1 Can (10 Ounces) Green Enchilada Sauce-8 Whole Wheat Tortillas, Medium-2 Cups Shredded Boiled Chicken (2-3 Boneless, Skinless Breast)-2 Cups (8 Ounces) Low Fat Shredded Cheddar Cheese-1/4 Cup Black Olives, Sliced-1 Jalapeno Pepper, Seeded And Diced
Preheat the oven to 375. In a small skillet, warm the enchilada sauce over medium heat. Dip four of the tortillas, one at a time, in the sauce to coat both sides. Arrange on the bottom of a greased 9" pie plate, overlapping to fit. Layer with 1 cup of chicken, 1 cup of cheese, 2 tablespoons of olives, and 1/2 the diced jalapeno pepper. Repeat the tortillas and layer with the chicken again. Pour the remaining sauce over the top and sprinkle with the remaining cheese, olives, and jalapenos. Bake for 10-15 minutes or until heated through and cheese is melted.
