Chcolate Graham Cracker Pudding

8 oz tub of Cool Whip Lite2 Lg. boxes of instant Fat Free/Sugar Free Chocolate Pudding2 cups of skim milk3 Tbsp Smart balance or other light margarine with EVOO7 sheets of Honey Graham Crackers
Using a mixer, take jello, cool whip and skim milk and mix together until fluffy. Place in refrigerator for about 5-10 minutes until set up fully.
Take 5 sheets of graham crackers (reserve 1-1/2 sheets)and crush up by hand or in chopper. Add melted butter and mix together until it is like a crumbly dough. Spread dough mixture (crust) in the bottom of a baking sheet or pie plate.
Take chilled pudding mixture and spread over crust, reserving about 1/3. Crush up 1 graham cracker sleeve and spread over pudding mixture. Add remaining pudding mixture then crush last 1/2 of graham crackers and sprinkle over the top for garnish.
Serving Size: makes approx. 14 small ramekin size servings.
