Low Calorie/ Low Fat/SugarFree Banana Muffins

Ingredients
__ 1 1/4 cups mashed ripe banana__ 3/4 cup splenda__ 2/3 cup buttermilk replacement (3/4 tbsp. vinegar + 2/3 cup nonfat milk)__ 4 1/2 tablespoons margarine__ 1/2 teaspoon vanilla extract__ 2 eggs__ 2 2/3 cups all-purpose flour__ 3/4 teaspoon baking powder__ 1 teaspoon baking soda__ 1 teaspoon cinnamon__ 1/4 teaspoon salt
Directions
1. Preheat oven to 350º F.
2. Lightly grease muffin tins or line with paper cups.
3. Place bananas, splenda, milk, melted margarine, vanilla, and eggs together in a large mixing bowl and beat with a wooden spoon until smooth.
4. In a second bowl sift together flour, baking powder, baking soda, cinnamon and salt.
5. Add dry ingredients to wet and mix until just combines. Do not over-mix, or.the muffins will be tough.
6. Fill muffin cups three-quarters of the way full.
7. If desired, add a small amount of mini chocolate chips and/or your favorite chopped nuts on top of muffins
8. Bake in oven for about 23-25 minutes.
9. A toothpick inserted in the center of the muffins will come out clean when they are cooked.
10. Remove from the oven and cool before serving.

    I made this recipe today and it turned out really well. It was easy to make and is nice and moist. I was only able to get 18 instead of 24, I might have made them too big!! - 8/5/08
