Super Easy French Onion Soup

Ingredients
6 large onions sliced thin6 cups reduced fat beef broth5 cloves garlic - minced1 whole bay leaf2 sprigs of rosemary1 tablespoon of olive oil6 slices of sour dough or French bread6 slices of reduced fat Swiss cheesepepper to taste
Directions
Get a large deep pot and it's the only pot you'll need.
Add olive oil and place over medium high heat.
Slice the onions as thin as possible and add to the pot as you slice them.
Stir often and get the yummy brown bits scraped up often.
Once all the onions are in, add the sprigs of rosemary, minced garlic, bay leaf and pepper.
Cook the onions until they are well carmelized and very brown. It'll take about 30 minutes givr or take.
Add the beef broth and bring to a boil.
While the soup heats up toast the bread slices.
Ladle soup into oven proof bowls set on a cookie sheet or broiling pan.
Top with your toast slices
Top that with your cheese slices.
Place under the broiler until the cheese is brown and bubbly.
Serve with a green salad and enjoy!
