Shannalee's basic thin crust cheese pizza

1.25 cups water1 tsp sugar1 pkg (or 2.25 tsp) quick rise yeast3.5 cups flour.5 tsp salt1 cup Hunts thick and rich spicy red pepper and chili's spaghetti sauce360g light mozzerella cheese
Mix 1 tsp sugar into 1 1/4 cups warm water, sprinkle with yeast and let sit in warm (not hot) place for 10 minutes, until yeast bubbles up. Mix salt into 2 cups of flour, and stir into yeast mixture. Add remaining flour, a small amount at a time, kneading until you have a smooth, soft ball of dough. Cover and place in a warm spot for about 30 minutes, until dough doubles in size. Divide dough into 3 equal amounts, and roll each very thin, to fit onto medium sized pizza pans. Top each with 1/4 cup sauce, and add any veggies, pepperoni, or toppings you want (count topping calories separately). Sprinkle with 120 g cheese on each pizza, and place on center rack of 400 oven for 10-12 minutes each.
