Not So Vegetarian Veggie Chili

2 cups sweet potato, diced (or carrots)1 medium onion, minced4 stalks celery, minced1 small red pepper, diced1 can (19oz.) tomatoes, crushed1 can (19oz.) kidney beans, rinsed1 lb extra lean ground beef, browned1 can (10oz) chicken broth1 cup water1.5 cup salsa (your favorite kind)1/4 cup taco seasoning2 tsp. chili powder
1) Add the first 4 ingredients to a large pot, sautee on medium heat for 5 minutes.
2) Add the rest of the ingredients, and let simmer on low for 25-30 minute, or until potatoes are tender.
3) Allow 10 minutes to cool, top with cheddar cheese, and serve!
